Ingredients for the Cake:
Curd or Yoghurt – 190 grams
Granulated Sugar – 130 grams
Oil – 80 ml
Baking Powder – 1 Tsp
Baking Soda – 1/2 Tsp
Salt – 1/2 Tsp
All Purpose Flour – 165 grams
Strawberry Emulsion – Few Drops
Vanilla Essence – 1/2 Tsp
Fresh Cut Strawberry – 1 cup
Sugar Syrup – 1/2 cup water : 1/4 cup sugar
Ingredients for Frosting:
Ice
Heavy Whipping Cream – 1/2 cup
Vanilla Essence – Few Drops
Icing Sugar – 2 Tablespoons
Step 1: In a large bowl add room temperature Curd, Granulated Sugar, Baking Powder , Baking Soda and Salt whisk all the ingredients until the mixture is smooth for about 10 minutes.


Step 2: Now add Oil, Strawberry Emulsion and Vanilla Essence to the Curd mixture and whisk till the Oil is combined.


Step 3: To the Curd mixture add All purpose flour and using a spatula mix the ingredients in a cut and fold fashion. Do not over mix the batter make sure there are no lumps.


Step 4: You can use a 6 inch tray, grease it with butter and place parchment paper so that the cake does not stick to the tray. Now, pour the batter and place the tray in a pre-heated oven @350 degrees for 30 to 40 minutes or until the cake is golden brown.


Step 5: For the frosting – You will need a large bowl filled half with ice cubes place another bowl in it. Now add 1/2 cup of whipping cream, vanilla essence, one drop of color (optional) and icing sugar 2 Tbps. Whip the cream using the whipping machine for about 5-6 minutes until the cream forms soft peaks.


Step 6: For your cake to taste soft and flavorful, slice your cake to layers (for my 6 inch cake I sliced it to half) On your first layer brush sugar syrup and now apply a layer of the frosting add fresh cut strawberries and then top it with another layer of cake and repeat the toppings. You can repeat the same for as many layers you may have.



Let the cake rest in the fridge for 1 to 2 hours before you enjoy!
