Diwali Special Mawa Gajia

Diwali is a popular Indian festival, that marks the spiritual victory of light over darkness, good over evil, and knowledge over ignorance. This festival cannot be completed without family, friends, lights and lots of good food and desserts! On this special festival, I want to share with you my mom’s recipe and my favorite savory – “Mawa Gajia or Kova Kajjikayalu”.

This dessert is a fried dumpling, crispy from the outside, soft and crumbly from inside. With a rich and natural flavor of dry fruits and mawa/granulated condensed milk, every bite of this authentic savory is enticing.

Ingredients for serving size : 10 pcs.

Ingredients for Filling

Mawa / Kova – 150 grams

Sugar – 100 grams

Semolina / Sooji – 4 tablespoons

Dry Fruits – Cashew nuts, Almonds, Pistachios , Raisins.

Ingredients for Dough

All purpose flour / Maida – 1 cup

Semolina /Sooji – 1/2 cup

Ghee – 2 tablespoons

Salt – pinch

Water – As required

Oil – for deep frying

Step 1. In a mixing bowl, add all-purpose flour / maida, Semolina /sooji , Ghee (hot), salt and water. Kneed the mixture to a consistency of a poori or pizza dough. Cover with a muslin clot and set it aside.

Step 2. Lets, start preparing the filling. In a pan, add the Mawa/ Kova and keep working on it on a medium flame till the oil from the Kova/ Mawa is separated.

Step 3. After the oil is separated add in the Semolina/ Sooji and roast it till the mixture turns golden brown. Transfer the mixture to a bowl and keep it aside.

Step 4. Now in the same pan add one tablespoon of ghee and all the dry fruits. Roast them and add it to the Mawa/Kova mixture. Now add sugar to the mixture and mix it well.

Step 5. Now, take a small piece from the dough, roll it to the size of the mould. Place the rolled dough on the mould and fill it with the Mawa mixture close the mould and press tight.

Step 6. In a pan heat the oil. When the oil is on medium heat, slowly put the Gajia. Fry until golden brown.
